The Chicken Kiev

‘Although it’s unknown exactly how Chicken Kiev has made it onto the menu of every self-respecting Russian restaurant from Brighton Beach to Sydney,’ reports Irakli Iosebashvili for The Telegraph. ‘This simple yet tasty combination of chicken breast, herbs and lots of butter has been the world-wide standard bearer for Russian cuisine for most of the 20th century.’
But the simple dish has anything but a simple history. ‘Despite its name, the origins of this dish are hotly disputed,’ says Iosebashvili. Whether the Kiev is in fact Russian, Ukrainian or French, it’s a dish which is loved the world over and at the centre of the delicious debate is of course, real butter.
