Asparagus with Lemon Butter and Anchovies

‘Asparagus – I absolutely love it! Thomasina begins. ‘It’s right in season now, don’t buy imported asparagus, wait for the British stuff and really enjoy it when it’s season.’
‘This recipe is so quick, you’ll be in and out in ten minutes!’ she promises. After having steamed and then chargrilled the asparagus, Thomasina cooks the anchovies in garlic and when the right consistency is reached, she emphasises the need to add ‘lots of butter’ and allow to melt. And it’s as simple as that! ‘Such a simple starter, such a lovely thing to have for lunch, and if you want to make it a complete meal, a couple of poached eggs on top with some toasted breadcrumbs will be delicious.’
