Butter Croissant Basics

Luckily the FOB team is here to offer you some helpful tips and advice.
Firstly, expect to invest some time and effort into making your butter croissants. Even the so-called “quick” recipes are time consuming so be prepared. You should also keep the dough as cold as possible while working with it. Try rolling the dough on a cool, hard surface (like marble) to get the best results.
If the recipe calls for the dough to be wrapped and left for a time, ensure that you wrap it securely enough to keep any air out. When cutting the dough, use a very sharp knife or a pizza cutter, avoid tearing or sawing the dough.
And lastly (this is the hard one) don’t tuck into your butter croissants fresh from the oven – they need some time to let the layers settle.
