As the weather turns colder, chef and Guardian columnist, Yotam Ottolenghi, is sharing his recipe for the perfect comfort food complete with rich spiced butter.
“The pungent herb butter added at the end gives it a nice kick,” explains Ottolenghi in his weekend column ‘The new vegetarian’, “for even more spice, add half a thinly sliced green chilli with the potatoes”.
Adding cumin seeds, coriander seeds, smoked paprika, sea salt and white pepper to the real butter creates an amazingly spicy butter to drizzle over the chowder before serving.
