Grill your Chicken with Basil Butter

The weather might not be co-operating with your barbecue plans, but you can still pop some chicken on the grill with this delicious basil butter recipe.

Head inside and out of the rain and heat up the grill! It might not be the ideal weather for a barbecue, but you can still look forward to some yummy summery foods with this delicious chicken basil butter recipe.


Ingredients:
For the basil butter:
50g butter at room temperature
3 tbsp chopped fresh basil leaves
1 tbsp grated parmesan
¼ tsp finely chopped garlic
¼ tsp sea salt
Sprinkling of black pepper


For the grilled chicken:
2 chicken breasts boneless and skinless
about ½ tsp black pepper
2 tbsp melted butter
2 tbsp chopped fresh basil leaves
2 good pinches sea salt


Method:
For the basil butter:
1. In a small bowl, combine the ingredients and mix well. Place on a sheet of clingfilm, form into a log, wrap up and refrigerate until needed.
For the grilled chicken:
2. Preheat the grill. Pound the chicken breasts until thin. Press the black pepper well into the chicken.
3. In a small bowl, mix the melted butter, basil and salt. Brush the chicken with the butter mixture. Cook under the grill, turning once, for 7-8 minutes each side or until cooked through. When done, cut into strips and serve with the basil butter (use about half; save any left over for another time).
4. Serve with a big salad of romaine lettuce, tomatoes and sliced onion with a few shavings of parmesan and a drizzle of olive oil.
