Hugh Fearnley Whittingstall's latest culinary offering from River Cottage is homemade spiced butter for potted trout and shrimps...
“You can pot all kinds of fish and all kinds of meat, but it’s the cunningly flavoured butter that makes each pot special,” explains Hugh.
“First, we have to clarify the butter – to clarify what that means – I’m removing the milky solids so what’s left is the pure butter fat…perfect for preserving.”
