English Mum's Fabulous Lemon Meringue Cupcakes
We love lemon meringue. We love cupcakes. Put them together and you have a surefire winner!
English Mum is a blogger who loves all things food related and she recently put butter to excellent use when she created lemon meringue cupcakes!
Recently she guest starred on the Rosie Scribble blog to share this amazing recipe and we simply had to pass it on.
Originally concocted as a Valentine’s Day present for her partner, English Mum created these buttery lemon meringue cupcakes by adjusting a normal cupcake recipe. Simply make normal cupcakes and bake them until springy. Then lavish with lemon curd (homemade or store bought – entirely up to you) and top with crunchy, sweet meringue.
Sounds too good to be true!
