Nigella Confirms that Italian Chefs use Real Butter!

Nigella Lawson reveals to the Observer the two most important influences in her cooking life: her mother and the unsung Italian culinary queen, Anna Del Conte.

In confessing and utterly justifying her love and admiration for Anna, Nigella reveals just some of her wonderfully rich Italian recipes that she has reworked into her own favourite dishes. But first she makes something very clear: “A quick note: so many people are erroneously convinced that Italians don’t use butter, but olive oil only; but as Anna would tell you – and often, sometimes with the slightest edge – this is not at all the case.”

From the creamy, citrusy Lemon Risotto to the ‘Britalian’ children’s favourite Spaghetti with Marmite, these recipes just wouldn’t be what they are without real butter.
