Nigel Slater's salmon in pastry
Nigel Slater treats the Observer to a quick summer lunch recipe using sustainably produced salmon and real butter.
Nigel makes things easy by using ready-rolled, all-butter puff pastry to create deliciously buttery salmon pastry parcels.
The key is adding freshly chopped basil and parsley to the butter which is spread on top of the salmon before it’s wrapped in the pastry to bake for 20 minutes until the parcels are crisp, golden and begging to be eaten!
