Fresh sage is not something that we all buy every day, but when we do, it's a shame to let any leftovers go to waste. Luckily, all you need to do is pull out the butter.

According to Regina Schrambling of Epicurious.com, if there is one shortcut in the kitchen that everyone needs to know, it is the versatility of compound butter. Compound butter is butter that has a flavour or that has had additional ingredients added to it. As Regina says: “You can keep it in the freezer to melt over meat or fish or vegetables (particularly corn on the cob), or biscuits or cornbread.”


And it’s both easy to make and a very useful way to use up any leftover herbs – like sage. All you need to do is chop up the herb and mix it with slightly softened butter. If you are feeling creative, you can even fashion it into a shape, but a normal freezer container will also do just as well. Then you simply freeze and use as and when you need it.


Regina advises roughly half a cup of the chopped herbs or sage to half a cup of butter, but you can easily experiment with your own quantities or add a mixture of herbs and garlic for even more flavour.
