Pollack has rapidly risen in popularity this year due to it's low cost, sustainability and undeniable taste - perfect served simply with butter, lemon and capers.
The Telegraph have a wonderfully easy recipe (from grouprecipes.com) which instructs to pat dry your pollack and sprinkle with salt, pepper, lemon peel and chives before dotting with real butter and baking in the oven for just 12 minutes. Serve with capers, salad and buttery new potatoes for a perfectly fresh and zesty meal.
